Appam (Sweet)

Good for non-diabetic CKD. Dialysis may eat sometimes — for dialysis persons the low protein values makes it unattractive.

Ingredients

  • Wheat flour · 1 cup
  • Rice flour · 2 tbsp
  • Jaggery · 1/2 cup + 1 tablespoon
  • Cardamom powder · 1/4 tsp
  • Oil for deep frying

Method

  1. 1In a pan add jaggery with 1/4 cup water and bring it to a boil.
  2. 2Filter the impurities and put the jaggery back in the pan. In a bowl mix wheat flour, rice flour and cardamom powder. Add the jaggery syrup at near room temperature to the flour mixture.
  3. 3Mix well, add water to get the right consistency. Add ghee to this and mix well. The batter consistency should be thick enough to drop easily as you lift the spoon.
  4. 4Heat oil in a pan for deep-frying. Take a small size deep ladle and drop the batter in hot oil.
  5. 5Make one at a time. The appam will rise slowly and will be fluffy too. This appam will be soft.
  6. 6Cook both sides. Appam tastes good both hot and cold.
