Ingredients
- Ladies finger (okra)100 g · 10 medium size
- Besan60 g · 1/2 cup
- Rice flour5 g · 1 tsp
- Coriander powder1 g · 1/4 tsp
- Red chilli powder1 g · 1/4 tsp
- Turmeric powder2 g · 1/2 tsp
- Asafoetida1 g · 1/4 tsp
- Groundnut oil2.5 g · 2.5 g
- Chaat masala2 g · 1/2 tsp
Method
- 1Clean the bhindi and pat dry.
- 2Cut the head, tail and thinly slice length-wise. Remove all the seeds and transfer to a mixing bowl.
- 3Add all other ingredients and gently mix without squeezing the bhindi.
- 4Microwave on high for 8 minutes, then stir once with a spatula. Microwave 4-5 more minutes till crispy.
- 5Serve with hot jeera rice.
Notes from the contributor
- • Patient can eat one or half serving depending on electrolyte status.
- • Reduce chaat masala to 1/4 tsp — all ingredients in chaat masala including black salt are high in potassium.
- • Bhindi is a high potassium vegetable. Consume in moderate amounts / occasionally.
