Ingredients

  • Bottle gourd (pale green, elongated)300 g · 1 1/2 cups
  • Peas fresh100 g · 1/4 cup
  • Turmeric powder2 g · 1/2 tsp
  • Red chilli powder2 g · 1/2 tsp
  • Coriander powder2 g · 1/2 tsp
  • Cumin seeds2 g · 1/2 tsp
  • Mustard seeds2 g · 1/2 tsp
  • Groundnut oil5 g · 1 tsp

Method

  1. 1In a pan add oil, rai (mustard) and jeera (cumin). After rai splutters add mix of haldi, chilli powder, coriander powder and asafoetida.
  2. 2Quickly add chopped vegetables, salt to taste and let cook with 1 tbsp water.
  3. 3Cover the pan. When almost cooked add the frozen peas. Cook covered for another 5 minutes.
  4. 4Add chopped green coriander/dhania.
  5. 5Serve hot with rotis or rice.

  • Can substitute with other low potassium squashes like zucchini, ridge gourd or snake gourd in rotation.
