Mangalore Cucumber Sambar
For occasional consumption with dietician's advice. Mangalore cucumber is not a high potassium veg (K=185). Leaching is generally not advised, unless advised by your doctor in exceptional cases. Dishes like these need to be taken with great caution. Recipe is added to highlight high nutrition values.

Ingredients
- Red gram dal100 g · 1/4 cup
- Cucumber orange round250 g · 1 cup of pieces
- Turmeric powder2 g · 1/2 tsp
- Onion big100 g · 1 big
- Tomato ripe hybrid100 g · 1 big
- Jaggery cane5 g · 1 tsp grated
- Chillies red5 g · 1/2 tsp
- Curry leaves5 g · A few
- Mustard seeds2 g · 1/2 tsp
- Groundnut oil5 g · 1/2 tsp
- Asafoetida1 g · 1/4 tsp
- Sambar powder15 g · 1 tbsp
Method
- 1In a pressure cooker, add diced onion and tomato, Cook till dal becomes soft. Now, drop the slices of oil, a cup of water and well-washed dal. Cook the dal to a soft consistency. It may need 2 whistles.
- 2Wash the sambar-cucumber and cut into chunks.
- 3Discard the soft middle portion with seeds.
- 4Cook in a vessel with some water till soft.
- 5Once the pressure from the cooker is released, open it and add the cooked cucumber, sambar powder and jaggery.
- 6Add 1 cup of water (or depending on the required consistency), mix well and bring to a boil.
- 7Temper it with oil, mustard seeds, red chili, and asafetida and curry leaves.
- 8Serve tasty southekayi or cucumber sambar with hot rice.
- 9This is the low potassium variant. The original recipe calls for a ground masala paste with coconut and whole spices.
- 10If you replace, Mangalore cucumber with a low potassium vegetable like Ridge gourd, the potassium content will come down to 2376 mg.
