Ingredients
- Brinjal pieces25 g · 1-2 pcs
- Raw basmati rice60 g · 60 g
- Cooking oil10 g · 10 g
- Coconut kernel dry10 g · 10 g
- Dry shredded coconut (masala)5 g · 1 tsp
- Red chilli (masala)1 g · 1
- Coriander seeds (masala)1 g · 1/2 tsp
- Cumin seeds (masala)1 g · 1/2 tsp
- Curry leaves2 g · 2 leaves
- Maharashtrian goda masala1 g · 1/4 tsp
- Turmeric powder1 g · 1/4 tsp
- Asafoetida0.5 g · 2 pinches
Method
- 1Coarsely grind all the masala ingredients.
- 2Heat oil in a pressure cooker, add asafoetida and curry leaves. Add brinjal and all the masalas and stir-fry for a minute.
- 3Add the washed and soaked rice, mixing all the ingredients together.
- 4Add 3/4 cup of water and cook for 3-4 whistles.
- 5Serve hot with curd or raita.
