Meeta Paneer Balls
Good for dialysis and CKD persons. Ideal for Dialysis patients, high caloric and high protein. If the sugar can be replaced with a artificial sweetener then good for Diabetic patients also. Most of the sodium and potassium is removed through with the whey.

Ingredients
- Paneer (from curdling of 1 lit cow milk with lemon juice)150 g · approx
- Powdered sugar40 g · 1/4 cup
- Cardamom powder0.5 g · 1/4 tsp
- Pistachio3 g · 4-5 no.
Method
- 1In a pan bring milk to boil over medium flame.
- 2When milk has boiled, reduce it to a low flame and squeeze lemon juice gradually, stirring all the time.
- 3In a few minutes the milk solids will separate from the whey. When it separates fully transfer it to sieve and let the whey drain into a vessel.
- 4Rinse paneer under the running water to remove any lemony taste.
- 5Transfer the prepared paneer to a muslin cloth, tie it into a pouch and let any balance water drain away.
- 6This could take about 30 minutes. Transfer the paneer into a dish and knead it well for 4-5 mins or until smooth to form dough.
- 7To the paneer, add powdered sugar and cardamom powder.
- 8Knead well for 3-4 mins.
- 9Divide mixture to 10-12 portions equal size balls. Shape them into round balls.
- 10Take each ball and press it gently between the palms and flatten it.
- 11Garnish it with 3-4 pieces of pista and serve it fresh.
