Onion Chutney
Onion chutney recipe (from Hebbar's Kitchen). Note: For CKD without diabetes — fried onions chutney is a better option as sodium, potassium and phosphorus content of onions is slightly reduced after frying or cooking by any means. Seasonings to be added after cooking. CKD with Diabetes — raw onion chutney is preferred because fat content is increased after frying and glycemic index is reduced this may cause slightly raised blood sugar levels.

Ingredients
- Oil · 2 tsp + 2 tsp tempering
- Urad dal · 1 tsp
- Chana dal · 1 tsp
- Kashmiri red chillies · 4 dried
- Onion, finely chopped · 1
- Small piece tamarind · 1
- Jaggery · 1/2 tsp
- Salt · to taste
- Water (or as required) · 1/4 cup
- Mustard seeds · 1 tsp
- Hing/asafoetida · pinch
- Dried red chilli broken · 1
- Curry leaves · few
Method
- 1Add 2 tsp of oil in a pan and roast 1 tsp urad dal, 1 tsp chana dal and 4 dried kashmiri red chillies on a low flame. Then add in the finely chopped onion.
- 2Sauté the onions till they turn slightly golden in colour. Cool it completely and transfer to the blender.
- 3Add the tamarind, jaggery and salt to taste. Blend to smooth consistency adding 1/4 cup water, or as required.
- 4Prepare the tempering by heating oil to which add mustard seeds, urad dal, pinch of hing, red chilli and few curry leaves. After it splutters add it to the onion chutney and serve along with idlis or dosa.
