Ingredients
- Wheat flour (maida)97.5 g · 3/4 cup
- Wheat flour atta62.5 g · 1/2 cup
- Bengal gram dal82.5 g · 1/2 cup
- Sugar180 g · 1 cup
- Rice flour30 g · 3 tb spoon
- Dudhi/Lauki50 g · 1/2 cup
- Cardamom powder2 g · 1/4 tsp
- Nutmeg1 g · 1/4 tsp
Method
- 1For Covering: Sieve both the flours together. Make soft dough while adding oil little by little. Keep it covered for an hour or two.
- 2For Preparation of stuffing (Puran): Wash and soak chana dal in 3-4 cups of warm water for an hour. Cook the dal with water and when almost done drain the water completely. Cook the dal further in a thick bottom vessel along with sugar and grated dudhi till it thickens or till the mixture leaves the sides of the vessel. Pass it through the churner/grinder till a homogenous mass is formed. Add nutmeg powder, cardamom powder and slightly heated saffron and mix well. Cover.
- 3For making of Puranpoli: Divide the dough and the stuffing into approximately 9 equal parts. Stuff a portion of filling into a ball of dough. Flatten it carefully. Roll the poli gently till 6-7 inches in diameter over a small amount of rice flour. Roast it on a medium hot tava from both the sides till golden brown. Serve hot with ghee or milk.
