Ridge Gourd Green Gram Dal Subzi

Good for CKD, dialysis, diabetics and post transplant. This dish can be made without dal too, to further reduce the potassium. Dal can be replaced with fresh peas which is lower in potassium than dal. Suitable for dialysis and those not on dialysis.

Ingredients

  • Ridge gourd100 g · 1/2 cup
  • Green gram dal10 g · 2 tsp
  • Onion big25 g · 1/4 big onion
  • Green chillies10 g · 2
  • Groundnut oil5 g · 1/2 tsp
  • Turmeric powder2 g · 1/2 tsp
  • Curry leaves · A few

Method

  1. 1Heat oil in a pan.
  2. 2Sauté chopped onion, turmeric powder, green chillies, curry leaves and boiled green gram dal until soft.
  3. 3Now, add chopped ridge gourd fry and for 2 minutes.
  4. 4Add salt as suggested
  5. 5Cover with lid and cook till soft.
  6. 6Serve hot with soft phulkas.
