Ingredients
- Besan45 g
- Cumin seeds1.3 g · 1/2 tsp
- Mustard seeds1.75 g · 1/2 tsp
- Fenugreek seeds2 g · 1/2 tsp
- Turmeric powder1 g · 1/2 tsp
- Red Chilli powder4 g · 1 tsp
- Curry leaves2 g · 7-8
- Drumstick45 g · 1
- Ladies finger45 g · 10-12
- Potato brown skin100 g · 1 med size
- Bottle gourd elongate pale green60 g · 1/2 cup
- Cluster beans30 g · 10-12
- Tamarind pulp25 g · 3 tbspoon (pulp)
- Rice bran oil45 g · 3 tbsp
Method
- 1Heat the oil in a pressure cooker. Add cumin seeds, mustard seeds, fenugreek seeds and asafetida and sauté it on a medium flame for till the seeds crackle. Now add curry leaves and to it and sauté it. Add besan and sauté it on medium flame for 3-4 minutes till it is golden brown colour.
- 2Add 3-4 cups of water and stir well to avoid lumps. Now add all the vegetables, turmeric powder, red chilli powder and salt as suggested by your dietician. On a high flame, pressure cook till the cooker gives 3 whistles. Allow the steam to escape before opening the lid to avoid over cooking of vegetables. Now add tamarind pulp, mix well and heat for another 2-3 min.
Notes from the contributor
- • One can reduce the quantity of tamarind and avoid drumsticks to reduce the phosphorus content. (Without drumsticks potassium = 250 mg/serving - with 1/2 the quantity of tamarind.)
- • CKD can consume with reduced potassium as shown in earlier point.
- • Serve hot with unsalted rice.
