Sprouts Filled Omlette

Ingredients
- Egg whites60 g · 2
- Oil5 g · 1 tsp
- Onion50 g · 1/2 medium
- Green chillies (chopped)5 g · 1 small
- Mixed sprouts20 g · 20 g
Method
- 1Break egg whites into a bowl, add salt and beat well.
- 2Heat oil in a non-stick pan, add half the portion of onions and green chillies and saute for a minute.
- 3Add half the quantity of beaten egg white and mix with a spoon.
- 4Allow it to set while it cooks.
- 5Place half the quantity of sprouts on one side and fold the other side over the sprouts.
- 6Cook for half a minute on either side.
- 7Repeat the procedure with the remaining ingredients for the second omelette.
- 8Serve hot.
Notes from the contributor
- • Sprouts can be replaced with bottle methi leaves.
- • Sprouts when subjected to even slight heat lose vitamin C and B for which they are cherished.
- • Sprouts are best had raw, but in small quantities (about 2 to 3 teaspoons).
