Sprouts Filled Omlette

Ingredients

  • Egg whites60 g · 2
  • Oil5 g · 1 tsp
  • Onion50 g · 1/2 medium
  • Green chillies (chopped)5 g · 1 small
  • Mixed sprouts20 g · 20 g

Method

  1. 1Break egg whites into a bowl, add salt and beat well.
  2. 2Heat oil in a non-stick pan, add half the portion of onions and green chillies and saute for a minute.
  3. 3Add half the quantity of beaten egg white and mix with a spoon.
  4. 4Allow it to set while it cooks.
  5. 5Place half the quantity of sprouts on one side and fold the other side over the sprouts.
  6. 6Cook for half a minute on either side.
  7. 7Repeat the procedure with the remaining ingredients for the second omelette.
  8. 8Serve hot.

Notes from the contributor

  • Sprouts can be replaced with bottle methi leaves.
  • Sprouts when subjected to even slight heat lose vitamin C and B for which they are cherished.
  • Sprouts are best had raw, but in small quantities (about 2 to 3 teaspoons).
