Varagu Rice Biryani
Good for all. Varagu rice is low glycaemic index food; it can be a good replacement for rice. It is a Diabetic and a kidney friendly recipe.

Note: Kodo Millet is also known as Varagu Rice in Tamil Nadu. Kodu is available in local grocery shops. Some common Names for Varagu (Setaria italica): Gujarati - Ral gana; Kanada - Priyanga thene; Kash. Snol; Malayalam - Thina; Marathi - Rala; Punjabi - Kangni; Tamil - Thinai; Tel - Karralu.
Ingredients
- Varagu Rice (Kodo Millet)150 g · 1 Cup
- Fresh Peas50 g · 1/3rd cup
- Carrot, Chopped50 g · 1/3rd cup
- Onion, Chopped50 g · 1/3rd cup
- Green Chilly · 1 no
- Red Chilly Powder · 1/2 tsp
- Garam Masala · 1/2 tsp
- Coriander Leaves · a few
- Mint Leaves · a few
- Cinnamon · 1-inch piece
- Clove · 1 no
- Bay Leaf · 1 no
- Ginger - Garlic Paste · 1tsp
- Oil · 2 tsp
- Water · 300ml (2 Cups)
- Salt · 1/4th tsp
Method
- 1Heat oil in pressure cooker. Add Cinnamon, Clove and Bay Leaf.
- 2Add chopped onions and sauté till transparent.
- 3Add Ginger - Garlic Paste and saute until the aroma comes.
- 4Later, add Green Chilly, Peas, Carrot, Coriander Leaves and Mint Leaves.
- 5Add Salt and Sauté for 2 minutes
- 6Add Garam Masala, Red Chili Powder and cook until oil releases out.
- 7Add 2 Cups (300ml) of Water.
- 8Add nicely washed Varagu Rice (Kodo Millet) and pressure Cook.
- 9Serve Hot with curd raita

- • Kodo Millet is also known as Varagu Rice in Tamil Nadu. It has a low Glycaemic Index and low Glycaemic Lead as it releases less glucose over a long period. It has the least amount of Potassium - 94mg as compared to other Cereals and Millets, with Rice 104 mg and wheat flour 311mg for 100g.
