Angel Food Cake

Ingredients

  • Egg white · 10 medium
  • Sugar · 1 cup
  • Cake flour, sifted · 1 1/2 cup
  • Lemon juice · 4 tsp
  • Vanilla essence · 1 tsp
  • Salt · 1 pinch

Method

  1. 1Preheat oven to 180°C.
  2. 2Whisk egg whites in a mixing bowl on medium-high speed until foamy. Add in lemon juice gradually until a soft peak is formed. Then, slowly add in sugar until a stiff peak is formed. Add vanilla extract and continue whisking.
  3. 3Dry mixture: Mix flour and salt, in a bowl, evenly and sieve.
  4. 4Carefully fold in the dry mixture by cutting down the centre and coming up the sides, using a rubber spatula.
  5. 5Gently spoon the batter into the baking pan with a removable bottom. Spread it evenly to ensure there is no air bubbles trapped.
  6. 6Bake for 30 minutes, or until cake is golden brown and springs back when lightly pressed.
