Ingredients
- Egg white · 10 medium
- Sugar · 1 cup
- Cake flour, sifted · 1 1/2 cup
- Lemon juice · 4 tsp
- Vanilla essence · 1 tsp
- Salt · 1 pinch
Method
- 1Preheat oven to 180°C.
- 2Whisk egg whites in a mixing bowl on medium-high speed until foamy. Add in lemon juice gradually until a soft peak is formed. Then, slowly add in sugar until a stiff peak is formed. Add vanilla extract and continue whisking.
- 3Dry mixture: Mix flour and salt, in a bowl, evenly and sieve.
- 4Carefully fold in the dry mixture by cutting down the centre and coming up the sides, using a rubber spatula.
- 5Gently spoon the batter into the baking pan with a removable bottom. Spread it evenly to ensure there is no air bubbles trapped.
- 6Bake for 30 minutes, or until cake is golden brown and springs back when lightly pressed.
