Bread Pudding

Ingredients
- Low fat milk · 3/4 cup
- Low fat yoghurt · 1/2 cup
- White bread, cubed · 2 1/2 slices
- Silken Tofu · 80g
- Blueberries · 1/2 cup
- Egg · 1/2 medium
- Sugar · 2 tbsp
- Vanilla essence · 1/4 tsp
Method
- 1Preheat oven to 180°C.
- 2Arrange bread cubes to cover the base and sides of a casserole dish. Sprinkle the blueberries over the bread.
- 3Whisk milk, yoghurt, tofu, egg, sugar, vanilla essence, in a mixing bowl, till well mixed.
- 4Gradually pour the mixture over the bread cubes until it is fully covered. Allow the bread to soak in the mixture for 10 minutes.
- 5Lastly, bake for 40 minutes.
