Bread Pudding

Ingredients

  • Low fat milk · 3/4 cup
  • Low fat yoghurt · 1/2 cup
  • White bread, cubed · 2 1/2 slices
  • Silken Tofu · 80g
  • Blueberries · 1/2 cup
  • Egg · 1/2 medium
  • Sugar · 2 tbsp
  • Vanilla essence · 1/4 tsp

Method

  1. 1Preheat oven to 180°C.
  2. 2Arrange bread cubes to cover the base and sides of a casserole dish. Sprinkle the blueberries over the bread.
  3. 3Whisk milk, yoghurt, tofu, egg, sugar, vanilla essence, in a mixing bowl, till well mixed.
  4. 4Gradually pour the mixture over the bread cubes until it is fully covered. Allow the bread to soak in the mixture for 10 minutes.
  5. 5Lastly, bake for 40 minutes.

  • Run a knife into the centre of the bread pudding; when it comes out clean, it is done and ready to be served!
