Capsicum & Chicken Quiche
Egg white, crunchy capsicum bits, mini juicy chicken chunks and a dash of herbs all steamed in a cupcake mould; a perfect little snack on the go.

Ingredients
- Egg whites · 5 medium
- Chicken breast · 90g
- Red capsicum, diced · 1/4 medium (20g)
- Yellow capsicum, diced · 1/4 medium (20g)
- Red onion, chopped · 1 tbsp
- Mixed herbs · 1/2 tsp
- Spring onion · 1g
Method
- 1Preheat the steamer.
- 2Boil the chicken breast for 3 minutes, or until it is fully cooked. Then, cut the chicken into 1/2 inch cubes.
- 3Whisk together egg white, onions, red and yellow capsicum and mixed herbs in a mixing bowl.
- 4Place a few pieces of chicken cubes in each silicone muffin cups and fill each cup with the egg mixture.
- 5Top it off with a few more chicken pieces and sprinkle spring onion.
- 6Steam quiche for 15 minutes, or until egg white turns opaque.
