Curried Rice with Fish
Fresh juicy fish, steamed atop fragrant curry-flavoured rice, with carrots that bring out a tint of sweetness and basil leaves folded in to complete this delectable dish.

Ingredients
- White rice, uncooked · 1 1/2 cup
- Dory fish, raw · 200g
- Red onion, chopped · 1 medium (80g)
- Carrots, diced · 1/2 medium (40g)
- Curry powder · 2 tbsp
- Olive oil · 1/2 tbsp
- Fresh basil leaves · 1 tsp
- Salt · 1/2 tsp
Method
- 1Heat oil in a rice cooker and stir-fry onions and carrots for 7 minutes, or until the carrots are soft. Add curry powder and cook till fragrant.
- 2Add rice, salt and enough water to cover the rice. Leave the rice to cook for 10 minutes.
- 3When the rice is almost turning opaque, nestle the fish on top of the partially cooked rice. Cover and cook for 5 minutes, until the rice and fish are cooked.
- 4Mix in basil leaves and fluff the rice with a fork.
