Curried Rice with Fish

Fresh juicy fish, steamed atop fragrant curry-flavoured rice, with carrots that bring out a tint of sweetness and basil leaves folded in to complete this delectable dish.

Ingredients

  • White rice, uncooked · 1 1/2 cup
  • Dory fish, raw · 200g
  • Red onion, chopped · 1 medium (80g)
  • Carrots, diced · 1/2 medium (40g)
  • Curry powder · 2 tbsp
  • Olive oil · 1/2 tbsp
  • Fresh basil leaves · 1 tsp
  • Salt · 1/2 tsp

Method

  1. 1Heat oil in a rice cooker and stir-fry onions and carrots for 7 minutes, or until the carrots are soft. Add curry powder and cook till fragrant.
  2. 2Add rice, salt and enough water to cover the rice. Leave the rice to cook for 10 minutes.
  3. 3When the rice is almost turning opaque, nestle the fish on top of the partially cooked rice. Cover and cook for 5 minutes, until the rice and fish are cooked.
  4. 4Mix in basil leaves and fluff the rice with a fork.

  • Try adding in fresh sliced chilli padi for the extra spicy taste.
