Okra, also known as lady's fingers, cooked in a spicy tangy gravy that explodes with flavor in every bite.

Ingredients

  • Okra, chopped · 3 cups (360g)
  • Tomato, sliced · 2 medium (180g)
  • Red onion, sliced · 1 small (40g)
  • Curry powder · 1 tbsp
  • Vegetable oil · 1 tbsp
  • Garlic, chopped · 1/2 tbsp
  • Chilli padi, chopped · 1 chilli
  • Salt · 1/4 tsp

Method

  1. 1In a frying pan, fry onion, garlic and chilli padi until fragrant.
  2. 2Add curry powder, tomato and 1/4 cup of water. Stir constantly, mash and cook the tomatoes until they soften.
  3. 3Mix in okra and salt. Continue cooking until the gravy thickens and okra is cooked to liking.
