Okra, also known as lady's fingers, cooked in a spicy tangy gravy that explodes with flavor in every bite.

Ingredients
- Okra, chopped · 3 cups (360g)
- Tomato, sliced · 2 medium (180g)
- Red onion, sliced · 1 small (40g)
- Curry powder · 1 tbsp
- Vegetable oil · 1 tbsp
- Garlic, chopped · 1/2 tbsp
- Chilli padi, chopped · 1 chilli
- Salt · 1/4 tsp
Method
- 1In a frying pan, fry onion, garlic and chilli padi until fragrant.
- 2Add curry powder, tomato and 1/4 cup of water. Stir constantly, mash and cook the tomatoes until they soften.
- 3Mix in okra and salt. Continue cooking until the gravy thickens and okra is cooked to liking.
