Dong Fen with Minced Chicken & Hairygourd

Ingredients
- Chicken breast, minced · 220g
- Dong fen, uncooked · 3/4 packet (200g)
- Hairygourd · 1 1/2 cup
- Low sodium soy sauce · 1 1/2 tbsp
- Sesame oil · 1 tbsp
- Garlic, minced · 1 tbsp
- Vegetable oil · 1/2 tbsp
- Sugar · 1 pinch
Method
- 1Soak dong fen in water for 15 minutes. Meanwhile, mix sesame oil and 2 tablespoons of soy sauce in a large bowl.
- 2Blanch the soaked dong fen in boiling water for 30 seconds. Then, remove and soak it in cold water.
- 3Toss the noodles with the seasoning mixture, until well mixed.
- 4Heat oil in a wok over medium heat and stir-fry garlic until fragrant. Add minced chicken and hairygourd and stir-fry for 3 minutes, or until the chicken is cooked.
- 5Add dong fen, 1 tablespoon of low sodium soy sauce, sugar and enough water to cover the dong fen. Cover the wok with a lid and braise for 2 minutes, or until the water evaporates.
