Dong Fen with Minced Chicken & Hairygourd

Ingredients

  • Chicken breast, minced · 220g
  • Dong fen, uncooked · 3/4 packet (200g)
  • Hairygourd · 1 1/2 cup
  • Low sodium soy sauce · 1 1/2 tbsp
  • Sesame oil · 1 tbsp
  • Garlic, minced · 1 tbsp
  • Vegetable oil · 1/2 tbsp
  • Sugar · 1 pinch

Method

  1. 1Soak dong fen in water for 15 minutes. Meanwhile, mix sesame oil and 2 tablespoons of soy sauce in a large bowl.
  2. 2Blanch the soaked dong fen in boiling water for 30 seconds. Then, remove and soak it in cold water.
  3. 3Toss the noodles with the seasoning mixture, until well mixed.
  4. 4Heat oil in a wok over medium heat and stir-fry garlic until fragrant. Add minced chicken and hairygourd and stir-fry for 3 minutes, or until the chicken is cooked.
  5. 5Add dong fen, 1 tablespoon of low sodium soy sauce, sugar and enough water to cover the dong fen. Cover the wok with a lid and braise for 2 minutes, or until the water evaporates.
