Ingredients

  • Chicken breast, minced · 70g
  • Egg white · 3 medium
  • Egg · 2 medium
  • Green capsicum, sliced · 1/2 medium (50g)
  • Red capsicum, sliced · 1/2 medium (50g)
  • White onion, chopped · 1/2 medium (40g)
  • Olive oil · 1/4 tbsp
  • Low sodium soy sauce · 1 tsp

Method

  1. 1Beat eggs and egg whites, in a medium bowl, and add in soy sauce.
  2. 2Heat oil in a skillet over medium heat and stir fry the onions with chicken cubes for 3 minutes, or until the chicken cubes are cooked.
  3. 3Add diced red and green capsicum evenly on the skillet and pour the egg mixture over.
  4. 4Cover with a lid and cook for 20 minutes over low heat, or until the egg is cooked.
