Ingredients
- Chicken breast, minced · 70g
- Egg white · 3 medium
- Egg · 2 medium
- Green capsicum, sliced · 1/2 medium (50g)
- Red capsicum, sliced · 1/2 medium (50g)
- White onion, chopped · 1/2 medium (40g)
- Olive oil · 1/4 tbsp
- Low sodium soy sauce · 1 tsp
Method
- 1Beat eggs and egg whites, in a medium bowl, and add in soy sauce.
- 2Heat oil in a skillet over medium heat and stir fry the onions with chicken cubes for 3 minutes, or until the chicken cubes are cooked.
- 3Add diced red and green capsicum evenly on the skillet and pour the egg mixture over.
- 4Cover with a lid and cook for 20 minutes over low heat, or until the egg is cooked.
