Pumpkin Chicken Congee

Ingredients
- Rice, uncooked · 1 1/2 cup
- Pumpkin, cubed · 2 cup (240g)
- Chicken breast, minced · 180g
- Sugar · 1 tsp
- Sesame oil · 1 tsp
- Salt · 1/2 tsp
Method
- 1Soak rice for an hour before cooking.
- 2Boil 3 cups of water in a pot over high heat. Add in the soaked rice and boil for 10 minutes.
- 3Add in pumpkin and minced chicken, mixing evenly under medium heat and cook for 15 minutes. Stir constantly to prevent the porridge from sticking to the pot. Add in more water from time to time if the porridge becomes too dry.
- 4Mash the pumpkin and continue to stir until the pumpkin is evenly distributed.
- 5Lastly, season with sesame oil, sugar and salt.
