Stir-fried Chicken with Black Fungus

Ingredients

  • Chicken breast, 1.5'' cubed · 180g
  • Black fungus, chopped · 3 medium (15g)
  • Red chilli, finely sliced · 1 chilli (10g)
  • Vegetable oil · 1 tbsp
  • Oyster sauce · 1 tbsp
  • Garlic, minced · 1 tbsp
  • Dark soy sauce · 1 tsp
  • Corn starch · 1/2 tbsp

Method

  1. 1Marinate chicken with oyster sauce and cornstarch in a bowl, for 15 minutes.
  2. 2Soak the black fungus with hot water for 15 minutes.
  3. 3Heat oil in a wok over medium heat and stir-fry garlic until fragrant.
  4. 4Add in chicken, black fungus and red chilli and stir-fry for 1 minute, or until the chicken is cooked.
  5. 5Season it with dark soy sauce.
